Description

Making your own homemade vegan InstantPot Lentil Stew is a great way to warm up around the dinner table when the weather cools down!

Ingredients

  • 5 cups dry lentils

  • 8 cups water or vegetable broth

  • 6 ounce collard greens

  • 2 tsp onion powder

  • 2 tsp garlic powder

  • 2 tsp crushed red pepper flakes

  • 1 tsp oregano

  • 1 tsp thyme


Instructions

  1. De-stem the collard greens and then roughly cut the collard green into 1-inch pieces. Next, add all of the ingredients into the InstantPot or electric pressure cooker. Stir everything together to ensure the spices get mixed well with the liquid. Set to the InstantPot to cook for 30 minutes on the manual or “pressure cook” setting.

  2. Allow the InstantPot to naturally release before removing the lid. Stir the stew (you may want to add in another couple of cups of water to reach your desired consistency). Top with your favorite hot sauce or toppings
