Italian Bean Balls

Description

These Italian Bean Balls are the perfect addition to any WFPB salad, sandwich, or bowl of spaghetti. You can also serve them as an appetizer!

Ingredients

4 cups black beans (cooked)

1 cup brown rice (cooked)

1 cup rolled oats

1/4 cup glutenfree or wholewheat flour

1/4 cup marinara sauce

1 tsp garlic powder

1 tsp onion powder

1/4 tsp black pepper


Instructions

  1. Drain and rinse the cooked beans and then add all of the ingredients to a food processor or into a large mixing bowl.

  2. Mix by hand or with the food processor on low medium speed for 1-2 minutes (stopping and scraping down the sides if needed).

  3. Preheat the oven to 375 degrees Fahrenheit before forming the mixture into golf ball-sized beanballs.

  4. Lay the beanballs out onto a parchment or silicone-lined baking sheet and bake 30 minutes.


Notes

The un-baked beanball mixture can be formed into golfball-sized balls and then frozen to be cooked at a later date.
