As a family we love eating a ton of different Mexican dishes, but we always have a problem finding great tasting oil free sauces to go well with our meals.
This is especially true in the case of enchilada sauces, most are filled with oil and a full list of ingredients used for preservation purposes. So when I was coming up with my easy enchilada sauce I wanted to ensure it was definitely oil-free, vegan & delicious, but I also wanted to make sure it had a small list of ingredients.
I originally created this enchilada sauce to be used in my plant-based enchilada bake, but it can be used in any dish that would call for an enchilada, taco, or hot sauce.
