Description
When the weather cools down there is not much else I would rather prefer cooking up than an InstantPot full of vegan collard greens.
Ingredients
1 lb collard greens
1 cup vegetable broth
Instructions

In the sink, wash and rinse off the collard greens and then remove the large middle stem.

Roughly chop the greens and then add them into the InstantPot with the vegetable broth.

Set the InstantPot to cook for 20 minutes on the manual or “pressure cook” setting.

Allow the InstantPot to naturally release before removing the lid. Then set the InstantPot to cook on the “saute” setting for an additional 10 minutes or until the majority of the liquid has evaporated from the bottom of the pot.
Notes
Top your collard greens with some vinegar, hot sauce, salt, etc, or add the sautéd greens into your favorite cooked soup
