InstantPot Collard Greens

This is definitely my favorite time of year to enjoy collard greens! Once the weather cools down and the first frost hits, the level of sweetness that the collards reach is almost magical.

Luckily this year I decided to plant a complete row (3’x50′) of collard greens for Dr. Miller and I to enjoy this Fall and Winter. And we have definitely been enjoying them, I think I have sautéd up a bunch of collards at least 4 times already this week! As much as I love these collards, I also wanted this recipe to be a great example of how you do not need oil or any added fats to cook up a delicious bowl of greens.

InstantPot Collard Greens

Description

When the weather cools down there is not much else I would rather prefer cooking up than an InstantPot full of vegan collard greens.

Ingredients

1 lb collard greens

1 cup vegetable broth


Instructions

  1. In the sink, wash and rinse off the collard greens and then remove the large middle stem.

  2. Roughly chop the greens and then add them into the InstantPot with the vegetable broth.

  3. Set the InstantPot to cook for 20 minutes on the manual or “pressure cook” setting.

  4. Allow the InstantPot to naturally release before removing the lid. Then set the InstantPot to cook on the “saute” setting for an additional 10 minutes or until the majority of the liquid has evaporated from the bottom of the pot.


Notes

Top your collard greens with some vinegar, hot sauce, salt, etc, or add the sautéd greens into your favorite cooked soup
