Easy Vegan Taquitos

The time of year is upon us when even the most modest fans of football unite to celebrate the biggest game of the year. For me, the Super Bowl has always been one of my favorite celebrations of the year. Growing up my parents would plan the event weeks out, making sure invitations had been sent and the menu was set. Of course, growing up the food that was served was the exact opposite of the delicious, easy to make vegan and whole-food plant-based meals that I enjoy so very much.

Eating this way now, it has been very important to me to have great WFPB options to share with my loved ones who are looking for great recipes and meals to enjoy and bring to their own Super Bowl parties. And one such recipe is my easy vegan taquitos. These are one of my favorite simples to make party recipes. The base recipe makes eight taquitos, but believe me, it can be multiplied as many times as you’d like. I know I will probably be making a batch of one hundred for my Super Bowl party. Another great thing about his recipe is the fact that it goes great with so many different sauce combinations, my favorite being salsa, and taco sauce.

Easy Vegan Taquitos

Making your own Easy Vegan Taquitos is a fun way to eat a healthy whole-food plant-based diet in a quick and delicious way!

Ingredients

8 corn tortillas

1 cup fat-free refried beans


Instructions

  1. Spread out the tortillas on a baking sheet lined with parchment paper and bake at 400 degrees Fahrenheit for 4 to 5 minutes. Remove the tortillas from the oven once they have been warmed up.

  2. Using a spoon add 1 to 2 tablespoons of the refried beans to the middle of the tortillas. Roll the tortilla up tightly and place onto the baking sheet lined with parchment.

  3. Bake the taquitos at 400 degrees Fahrenheit for 10 minutes. Turn the taquitos and bake for another 5 to 10 minutes or until the taquitos are golden brown and crispy.

  4. Remove from the oven and allow to cool before dipping in your favorite salsa or taco sauce.
