Vegan Chicken Taquitos

Whenever there was a big game growing up, one thing we seemed to always stock up on was frozen taquitos. Of course, the ones I grew up eating were filled with ingredients that were bad for your health. So for this year’s Super Bowl party, I wanted to try my hand at making healthy whole-food plant-based versions of some of our favorite party foods. And I must say, these vegan “chicken” taquitos turned out better than I could have ever expected! Crunchy on the outside, tender in the middle, and just enough spice to keep you coming back for more.

Vegan Chicken Taquitos

Description

Making your own Vegan Chicken Taquitos is a great way to bring the family around the table or TV to enjoy a healthy plant-based recipe!

Ingredients

  • 10 corn tortillas

  • 2 cups young green jackfruit

  • 1 tbs whole-wheat or gluten-free flour

  • 1 tsp chili powder

  • 1/4 tsp ground cumin


Instructions

  1. Spread out the tortillas on a baking sheet lined with parchment paper and bake at 400 degrees Fahrenheit for 4 to 5 minutes. Remove the tortillas from the oven once they have been warmed up. 

  2. Drain rinse the jackfruit from brine. Add the jackfruit to the food processor and blend for 30 to 60 seconds

  3. In a large bowl mix together the shredded jackfruit, flour, and spices. Using a spoon add 1 to 2 tablespoons of the shredded jackfruit mixture to the middle of the tortillas. Roll the tortilla up tightly and place onto the baking sheet lined with parchment. 

  4. Bake the taquitos at 400 degrees Fahrenheit for 10 minutes. Turn the taquitos and bake for another 5 to 10 minutes or until the taquitos are golden brown and crispy.

  5. Remove from the oven and allow to cool before dipping in your favorite salsa or taco sauce.
