InstantPot Sweet Potatoes

If you know me, you know I love sweet potatoes! They are a delicious and super healthy snack, which is a good thing because I could eat them all day long.

I used to cook my sweet potatoes in the oven, but I have found that to get them to the desired sweetness it took forever. So I started cooking them in my InstantPot and with a 30 minute cook time I have never looked back!

These InstantPot sweet potatoes are so good that we will eat them as a snack right out of the refrigerator where we store them.

Ingredients

  • 8 sweet potatoes (medium size)

Instructions

  1. Place a steamer basket or trivet at the bottom of the InstantPot. Pour in two to three cups of water depending on the size of your InstantPot.
  2. Add in the sweet potatoes ensure that there is enough headspace to close the lid properly.
  3. Set to cook for 30 minutes on the manual or “pressure cook” setting.
  4. Allow to naturally release before removing the lid.

Notes

Once cooked, you can remove the sweet potatoes and use them right away or allow them to cook before placing the refrigerator for up to 5 days.
