One thing that has helped me as I’ve lost 100 pounds and kept it off is eating green leafy vegetables! My favorite right now is bright green and delicious spinach. Like most of my recipes, I try to keep my salads as simple as possible so you can make them at home in a hurry.

Ingredients

  • 8 oz spinach
  • ½ cup black beans (cooked)
  • 1 tbs flax seeds (whole)
  • 2 tsp balsamic vinegar
  • 1 tsp BBQ sauce
  • 1/2 tsp liquid smoke

Instructions

  1. In a large bowl, mix together the black beans, vinegar, bbq sauce, and liquid smoke.
  2. Next, mix in the spinach and top with the whole flax seeds to add a fun crunch.

Notes

We enjoy using black beans in this recipe, but chickpeas, pinto, white, red, and really any other type of bean will also work great.
