I know that many individuals dread the upcoming holiday season for the pure fact that they will have to endure dinner after dinner of noncompliant fatty animal-based foods. It can really be one of the hardest times of the year to stick with and eat a whole food plant-based, vegan diet.
I know of many stories of individuals who spent their entire Thanksgiving or Christmas party snacking on grapes and carrot sticks. Now those are two delicious and healthy options, but I want to help everyone enjoy a tasty holiday meal while sticking with whole food plant-based ingredients. I also look at this time of year as the biggest and best time to introduce this way of eating to the people who need it the most, our loved ones. I think if we are able to serve delicious and healthy plant-based options during the holidays, then we already have a foot in the door when it comes to helping our loved ones transition to a healthier and much more compassionate way of eating.
Today’s bread pudding recipe was made to resemble the bread pudding I grew up loving to eat when the weather began to chill down. I always recommend whole wheat bread when, but for this recipe, if you believe nonwhole grain bread will be more palatable to your friends and family then by all means go for a vegan and oil-free loaf of your choosing. Making your own homemade vegan bread pudding is a great way to ensure your holiday dessert is a healthy, oil-free, plant-based version!

Ingredients
1 vegan and oil-free loaf of bread
2 cupsplant-based milk
1/2 cupmaple syrup
3 tbs corn starch
1 tspvanilla extract
1 tspcinnamon
Instructions
Cut the baguette into 1/4″-1/2″ cubes. Mix the corn starch, cinnamon, and vanilla extract into the 2 cups of the plant-based milk (a blender works great for this step).
Add the bread cubes into a glass baking dish and then pour over the liquid mixture. Mix together so that all of the bread pieces are evenly coated before spreading out into a 2 to 3-inch thick layer.
Bake at 375 degrees Fahrenheit for 40 minutes or until the top of the dish is golden brown.
