Banana Bread Breakfast Bars

One of our favorite new breakfast recipes has definitely been our banana bread breakfast bars. These bars are a healthy, vegan, and whole-food plant-based option for anyone who loves a hearty breakfast.

Oats are one of our favorite ingredients to use in the kitchen so it is no wonder why they make up the majority of this recipe. If you do not prefer oats you can use any other rolled grain in place of the oats. And almost any flour either wheat-based or gluten-free will work in place of the oat flour.

Description

These banana bread breakfast bars are perfect for your early morning meal, midday snack, or a healthy dessert to end the day! 


Scale

Ingredients

1 cup rolled oats (old fashion or quick-cooking will work great)

1 cup oat flour (any other wheat-based or gluten-free option will work)

1 1/2 cups water or plant-based milk

2 to 3 tablespoons maple syrup

2 ripe bananas

2 teaspoons apple cider vinegar

1 teaspoon cinnamon

1 teaspoon baking soda


Instructions

  1. Blend together the bananas, water, maple syrup, and apple cider vinegar. 
  2. In a medium-sized mixing bowl, mix together the oats, flour, cinnamon, and baking soda.  
  3. Once the dry ingredients have been mixed, stir in the blended wet ingredients until everything is well combined. 
  4. Pour the batter onto a parchment paper-lined baking sheet and bake for 25 to 30 minutes at 385 degrees Fahrenheit. 
  5. Remove from the oven and allow to cool for 5-10 minutes before cutting into bars and serving.
