Vegan “Cheesy” Chili Beans

Every week we cook a big pot of black beans in our Instant Pot. With a pot full of black beans cooked, cooled, and ready to heat in the refrigerator we have found many ways to use black beans in our daily recipes.

One of our favorite ways to use black beans is making them into our “cheesy” chili beans. Once cooked, these chili beans go great over a bowl of rice, a baked potato, or even some cooked pasta.

Description

Vegan “Cheesy” Chili beans go great over a bed of brown rice, on top of a baked potato, or even onto a bowl of cooked pasta.

Ingredients

4 cups black beans, cooked

3 cups water

2 to 3 tablespoons nutritional yeast

1 tablespoon chili powder

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon ground cumin

1/2 teaspoon salt 

*optional 1 to 3 tablespoons pickled jalapenos 


Instructions

  1. Add all of the ingredients into a medium-sized pot on the stovetop. Mix together so that all of the spices are well dissolved. 
  2. Cover and cook on a medium heat setting for 15-30 minutes. You can also cook this on the low setting for a longer time frame (1 t 2 hours) if you prefer the set it and forget it approach.
