Chocolate Peanut Butter and Banana Oatmeal

Ever since my wife and I began eating a plant-based diet, oatmeal has been a staple at breakfast time. If you have been following me for any time this is not a surprise to you as I have many other oatmeal recipes already on the site. But today I wanted to share with you a new oatmeal recipe that we have been enjoying lately.

This chocolate, peanut butter & banana oatmeal is not only a great to have at breakfast, but it also makes a wonderful mid-day snack! I hear from a lot of people that they have tried eating oatmeal for breakfast but get tired of the “same ole thing” at 7:15 every morning. I can definitely understand not wanting to eat the exact same thing every day, but I also believe that a key to sticking with this way of eating is finding just a few staple starches and preparing them 1,000 different ways. I find that by keeping the base of the meal the same, half of the work is already done and the rest can be made as creative as you would like. This is definitely the case when it comes to my chocolate peanut butter banana oatmeal, you can add or take away as much as you’d like to fit your personal taste preferences.

As with all of my recipes this oatmeal is made with low fat, whole-food plant-based ingredients so fill up and enjoy the most important meal of the day!

Description

This Chocolate Peanut Butter Banana Oatmeal is one of our favorite breakfasts for then we need a healthy morning meal in a hurry!


Scale

Ingredients

  • 1/2 cup rolled oats

  • 1/2 cup plant-based milk

  • 2 ripe bananas

  • 1 tbs cacao or cocoa powder

  • 1 tbs defatted peanut powder

  • 1 tbs maple syrup


Instructions

 

  1. Bring the 1/2 cup plant-based milk to a boil and then add in the oats. Remove the pot from the burner and leave covered for 5 minutes.

  2. Slice the banana into 1/4 inch pieces. Add the banana pieces, cacao, peanut powder & maple syrup to the oats. Mix everything together before serving.


Notes

This recipe can be turned into overnight oats by skipping the step to boil the plant-based milk and then mixing all of the ingredients together and storing it in the refrigerator overnight.
