Soup is one of the best foods to prepare and enjoy as you are transitioning to a vegan diet. Most recipes can be altered very easily to exclude animal products and become a compassionate meal. And then it’s not very hard to take it one step further and create a completely healthy whole food plant-based soup, most of the time you will just need to omit oil from a given recipe. As much fun as it is to “veganize” some of my old favorite recipes, I wanted to share a soup recipe that was and will always be a whole food plant-based vegan soup with no need for alterations.
This is a soup that I love to make as the temperature begins to drop and we are wanting something delicious to help warm us up. I have made some other soups and stews in the past and thought it was time to share my taco soup recipe. I will also mention that I recently made this soup for a get together with a completely non-veg crowd, and it was a hit! Everyone loved it, went back for seconds, and when the night was over my InstantPot was empty. That is exactly how I hope all of my recipes are received when I am coming up with them. I will also note that this is a completely low-fat soup that works great on weight loss programs and is extremely filling. I know that this will be made in my home many more times throughout the Winter months, and I also have a feeling this will be on my menu for our Super Bowl party this upcoming February!
Lastly, I will note that with all of my recipes I do not include salt as we always like to salt to taste after our meals have been cooked. With that being said you can always add in some salt to the recipe before or after it has been cooked to meet your own taste preferences.
