Peanut Butter Chia Smoothie

This recipe is my wife, Dr Miller’s all time favorite on the go breakfast. She normally enjoys overnight oats or my baked breakfast bars in the morning, but as a professor she has to be into work pretty early some days.

On those days that she needs to be into the office extra early, I will get up and make her a peanut butter chia smoothie before she heads out for a day teaching at the university.

Ingredients

  • 3 ripe bananas (frozen)
  • ½ cup plant-based milk (almond, soy, oat, etc)
  • 2 tbs defatted peanut powder
  • 1 tbs chia seeds

Instructions

  1. Add all of the ingredients into your blender or food processor.
  2. Blend for 1 to 2 minutes or until all of the bananas have been blended into a creamy smoothie consistency.
