Vegan “Chicken” Tacos

Tacos have always been one of my favorite foods to eat, so when I made the switch to eating a whole food plant-based diet I wanted to find ways to create similar tacos that I had loved eating growing up. So I wanted to add some familiar flavors to always versatile green jackfruit.

We love enjoying this recipe on tacos with some rice, beans, Jalapeno Lime Guacamole, and some homemade Fat-Free Refried Beans. If you have leftovers this recipe reheats great, and we love to mix in some BBQ sauce to make barbecue shredded “chicken” tacos for lunch the following day.

Vegan “Chicken” Tacos are a great way to introduce your omnivorous friends to how simple and delicious plant-based eating can be!

Ingredients

  • 2 cans young green jackfruit

  • 1 cup water

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1 tsp oregano

  • 1 tsp crushed red pepper flakes


Instructions

  1. Drain and rinse your jackfruit and then place it into a food processor.

  2. Process for 10-20 seconds using the pulse mode to ensure the jackfruit is “shredded” without being disintegrated.

  3. Place the shredded jackfruit and the rest of the ingredients including into the InstantPot. Set your InstantPot to cook for 10 minutes on the manual or “pressure cook” setting.

  4. Allow the pressure cooker to naturally release before removing the lid and serving.


Notes

This recipe can also be made on the stovetop. Follow steps 1 and 2 before adding to a stockpot and simmering for 25 to 30 minutes.
