I have been working hard in the kitchen these past few weeks to ensure that all of my holiday recipes are out with time to spare before Thanksgiving. I know that this time of year can be a difficult time for many when it comes to food choices. I know that there are a lot of individuals that decided to start eating a healthy vegan diet this year, who is going to be pressured to go off the course this holiday season.
That is why I believe it is so important to have great plant-based recipes available in order to succeed when it comes to food choices during Thanksgiving and Christmas. Stuffing has always been a big deal in my family’s household. I can’t think of a Thanksgiving where we didn’t have at least three different variations of stuffing at the table. This year I want to help you bring the best tasting and most health-promoting stuffing to your upcoming holiday get-togethers.
This apple stuffing is full of flavorful spices that are sure to get you in the holiday spirit. I find that the apple doesn’t overpower this dish, but rather supports the other savory seasonings fantastically. I ended up baking this for around 40 minutes at 375 F to get my desired crispness, I would recommend checking at around 30 minutes to make sure you catch it at the perfect moment.

This vegan Apple and Sage Stuffing is a great way to introduce your loved ones to a healthy wfpb diet this holiday season!

Ingredients
1baguette (vegan and oil-free)
2 1/4 cupsvegetable broth
2 medium onions
2 medium red apples
1 tbs minced garlic (4 cloves)
1 tbs sage
1 tspthyme
1 tsprosemary
1/4 tspblack pepper
Instructions
Cut the baguette into 1/4″-1/2″ cubes and then bake the bread cubes at 250 degrees Fahrenheit for 25 to 30 minutes or until crisp.
Dice the onions and then add them to a medium saucepan along with the minced garlic. Sauté the diced onions and minced garlic in 1/4 cup vegetable broth on medium heat for 8 to 10 minutes.
Dice the apples into 1/4″-1/2″ pieces, and then add them to the sauteed garlic and onions along with the remaining two cups of vegetable broth and the dry spices.
In a large mixing bowl combine all of the ingredients together including the toasted bread cubes and then transfer into the baking dish.
Bake at 375 degrees Fahrenheit for 45 minutes or until the top of the dish is golden brown.
