Black-Eyed Pea Vegan Burgers

I have been looking to incorporate a larger array of legumes into my recipes and today is the day of the black-eyed pea. I am a big fan of black-eyed peas, and I find that I am able to use them in a lot of different recipes that might call for black beans.

Most of you know how much I love making great bean burgers, so I wanted to share my easy black eye veggie burger recipe. I am planning on making a few of these burgers for a couple of get-togethers that I have planned for watching the remaining college football bowl games and the last few weeks of the NFL season. Black-Eyed Pea Vegan Burgers

Description

Making your own black-eyed pea vegan burgers is extremely simple and is a great way to bring the family around a healthy plant-based burger!

Ingredients

  • 3 cups cooked black-eyed peas (drained & rinsed)

  • 1 cup brown rice (cooked)

  • 1 cup rolled oats

  • 1 tbs soy sauce

  • 1 tbs ketchup

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 2 tsp paprika

  • 1/4 tsp black pepper


Instructions

  1. Add the beans to an electric stand mixer or into a large bowl. Mix by hand or with the stand mixer on low-medium speed using a scraper paddle attachment for 1-2 minutes.

  2. Add the rest of the ingredients to the beans and mix by hand or with the stand mixer on low-medium speed for 3-5 minutes.

  3. Form the mixture into patties and then place them onto a parchment-lined baking sheet. Bake at 400 degrees Fahrenheit for 25 minutes.


Notes

This recipe can also be grilled: Get your grill very hot (450 F+). Grill on each side for 3-5 minutes (waiting to flip the first time until the burgers release easily from the grill).
