Salsa Veggie Burgers

Now that the holidays and (what seemed like) endless travel is over, it is time to start thinking about a really important upcoming event: the Super Bowl! Whether your team is still in the mix doesn’t really matter because we all know that the Super Bowl is really about the food. Now I understand the Super Bowl is not synonymous with healthy food or vegan food for that matter, but I think it is a great time to work on your whole-food plant-based cooking skills. Because what better place to share the healthiest and most delicious way of eating than your upcoming Super Bowl Party! Today’s recipe is my salsa burger.

For this recipe, I used the grill as my mode of cooking, but you can always cook these burgers in the oven for 25-30 minutes at 400 F. I have been making various types of bean burgers for a while now, so if salsa isn’t your things, make sure to check out my other plant-based bean burgers. My favorite toppings for these burgers are definitely fresh lettuce and a dollop of even more spicy salsa.

Salsa Veggie Burgers

These delicious Salsa Veggie Burgers are an easy to make healthy lunch, dinner, or snack that the whole family will enjoy!

Ingredients

  • 2 cups rolled oats

  • 1 cup cooked black beans (drained and rinsed)

  • 1 cup brown rice (cooked)

  • 1/4 cup salsa

  • 1 tsp garlic powder

  • 1 tsp onion powder


Instructions

  1. Add the beans to an electric stand mixer or into a large bowl. Mix by hand or with the stand mixer on low-medium speed using a scraper paddle attachment for 1-2 minutes.

  2. Add the rest of the ingredients to the beans and mix by hand or with the stand mixer on low-medium speed for 3-5 minutes and then form the mixture into patties.

  3. Get your grill very hot (450 F+). Grill on each side for 3-5 minutes (waiting to flip the first time until the burgers release easily from the grill).


Notes

These burgers can be frozen after being formed into patties. Place the uncooked patties onto a parchment-lined baking sheet or cutting board and freeze overnight before transferring to a freezer-safe bag or container.
