If I were stranded on a des(s)ert island and I could only have two things to eat for my stay, it would most certainly be sweet potatoes & nice cream. So naturally I wanted to make a super simple and delicious recipe with two of my most favorite foods!

Ingredients

• 3 cups sweet potato cubes (frozen)
• ½ cup plant-based milk (almond, soy, oat, etc)
• 2 tbs cacao or cocoa powder
• 1 tbs maple syrup

Instructions

1. Add all of the ingredients into your blender or food processor.
2. Process on medium speed for 30 to 60 seconds, or until the frozen sweet potatoes have been blended into a smooth soft-serve consistency, and serve.
